This and That

I can’t believe I really only have five or six weeks left of homework before I’m free of my spring semester of classes. Last week, I was stressing again, ready to completely give up. Then I wrote an 850-word essay on Dante’s Inferno, and wrote on a discussion topic about same-sex marriage in my women’s studies class, and I felt so much better. It’s amazing how two seemingly small assignments can really put a weight on your shoulders. For the next two or three weeks, things will be smooth-sailing right before it’s time to hunker down again and study for finals. I’m welcoming the breath of fresh air, though, and I’m almost looking forward to finals … because finals mean SUMMER BREAK. (And I say “summer break” loosely because I’ll still be working a full time job all summer.)

Husband and I may be getting another kitten in the near future. My in-law’s cat had babies, so we may be taking one, if Loki will stand for it. They’re tiny and grey right now, and I’d really like a girl. We’re thinking of the name “Eris,” which I believe is the name of the Greek goddess of chaos/strife. (If you remember, Loki is named after the Norse god of mischief, and he fully lives up to his name!) If we do happen to get a kitten, I believe this will be our last one. Two is enough. Right? (I told Husband to be careful, though. After the kittens are grown, I’ll be ready for babies. Hah!)

Husband and I are thinking of doing a “No Meat Monday” every week, as well as a meatless dinner another day of the week. While we’re dipping our feet into consuming less meat, we’d still like to eat nutritiously. Any ideas on healthy, vegetarian dishes that we could try? I’m not a HUGE fan of cheese, but I’ll try anything. I really don’t like soy chicken, either, so no fake meats, if possible. If you have any suggestions for vegetarian cookbooks and/or blogs, send them my way!

I’m a fan of any sort of whole wheat pasta tossed in olive oil with some pan cooked broccoli, a titch of parmesan cheese on top and you’ve got a meal with protein, fiber & grains!

Good luck as you push through the last few weeks of school. I know what you mean about tiny assignments weighing on you; they really can!

I’m a solid meat eater, but I’ve done some cutting back due to cholesterol and inflammation issues. White beans (northern beans) are a great option and a favorite of mine! Here are some links a vegetarian friend of mine shared. The broccoli/bean penne is a favorite (with gluten free pasta still not bad!). Check out the Whole Foods website too for other great recipes

I know what you mean about the small assignments; they can ruin an otherwise perfect week. I can hardly wait until summer break; although, if I’m lucky, I’ll have an internship, so it won’t be a summer break in the traditional sense of the ohrase. But good luck surviving until then!

Woohoo on getting that essay done!

Do get another kitten!! When we got ours, our other cat didn’t appreciate having a new kitten in the house but then they became best friends after a week or so. Now they love playing with each other and I love knowing that they have each other to play with.

I’ve been absent a while and so it was wonderful to sit and catch up with some of your posts!

I’d personally love another kitten, but not until I’m sure that I can afford to support one. That means not until I have a job. Right now my own little child, my cat, has special needs – aka expensive. By the way, Loki is adorable.

I highly recommend some hummus and pita bread for snacks. Actually you can make a healthy meal from those two items and a few others. I usually make a little sandwich whenever I have the hummus and pita bread. Just take two pieces of pita bread, spread some pesto on one side, place some spinach leaves down, spread a little hummus on the leaves and the plain side, and sprinkle some feta cheese on top of the hummus if you like. Since you put the hummus on both sides the cheese will stay put.

I have a shirt that says Dante’s Taco Shack and on the shirt is a picture of the devil with a taco.

…Not that I’m like into Satan or anything.

I love Dante’s Inferno. That’s the point I was trying to get at.
